So, prepare each item individually. For example, for the squash, peel it, then coat it with olive oil, sprinkle it with salt, and roast it in the oven at a temperature around 400–425 F / 200–220 C until it begins to brown. When you go to purée the ingredients, hold back some of the squash and some of the stock, taste the purée, and see which you think it needs. Want it thicker? Add more squash. Thinner? Add more stock. This soup by itself is very basic. Garnish with whatever else you have on hand that you think might go well, such as garlic croutons and bacon. Or top with a small dab of cream, some toasted walnuts, and dried cranberries to give it a feeling of Thanksgiving. How about a teaspoon of maple syrup, a few thin slices of beef, and some fresh oregano? Chives, sour cream, and cheddar cheese? Why not! Instead of purchasing items to follow a recipe exactly, try using leftover ingredients from other meals to complement the squash soup. If you’re in a rush, you can “jump-start” the squash by microwaving it first. Peel and quarter the squash, using a spoon to scoop out the seeds. Then, cube it into 1–2” / 3–5 cm pieces, drop it into a glass baking pan that’s both oven and microwave safe, and nuke it for four to five minutes to partially heat the mass. Remove from microwave, coat the squash with olive oil and a light sprinkling of salt, and roast it in a preheated oven until done, about 20 to 30 minutes. If you’re not in a rush, you can skip the peeling step entirely: cut the squash in half, scoop out the seeds, add oil and salt, roast it for about an hour (until the flesh is soft), and use a spoon to scoop it out. Pumpkin Cake There are two broad types of cake batters: high- ratio cakes--those that have more sugar and water than flour (or by some definitions, just a lot of sugar)--and low-ratio cakes—which tend to have coarser crumbs. For high-ratio cakes, there should be more sugar than flour (by weight) and more eggs than fats (again, by weight), and the liquid mass (eggs, milk, water) should be heavier than the sugar. Consider this pumpkin cake, which is a high-ratio cake (245g of pumpkin contains 220g of water--you can look these sorts of things up in the USDA National Nutrient Database, available online at http://www.nal.usda.gov/fnic/foodcomp/search/). In a mixing bowl, measure out and then mix with an electric mixer to thoroughly combine: 1 cup (245g) pumpkin (canned, or roast and puree your own) 1 cup (200g) sugar 3/4 cup (160g) canola oil 2 large (120g) eggs 1 1/2 cups (180g) flour 1/4 cup (40g) raisins 2 teaspoons (5g) cinnamon 1 teaspoon (5g) baking powder 1/2 teaspoon (5g) baking soda 1/2 teaspoon (3g) salt 1/2 teaspoon (2g) vanilla extract Transfer to a greased cake pan or spring form and bake in an oven preheated to 350 F / 175 C until a toothpick comes out dry, about 20 minutes. Notes Try adding dried pears soaked in brandy. You can also hold back some of the raisins and sprinkle them on top. One nice thing about high-ratio cakes is that they don’t have much gluten, so they won’t turn out like bread, even with excessive beating. With a total weight of 920 grams, of which only roughly 20 grams is gluten, there just isn’t enough gluten present in this cake to give it a bread-like texture. There’s also a fair amount of both sugar and fats to interfere with gluten development.

Cradle to Cradle: Remaking the Way We Make Things

The Path Between the Seas: The Creation of the Panama Canal, 1870-1914

On December 31, 1999, after nearly a century of rule, the United States officially ceded ownership of the Panama Canal to the nation of Panama. That nation did not exist when, in the mid-19th century, Europeans first began to explore the possibilities of creating a link between the Atlantic and Pacific oceans through the narrow but mountainous isthmus; Panama was then a remote and overlooked part of Colombia. All that changed, writes David McCullough in his magisterial history of the Canal, in 1848, when prospectors struck gold in California. A wave of fortune seekers descended on Panama from Europe and the eastern United States, seeking quick passage on California-bound ships in the Pacific, and the Panama Railroad, built to serve that traffic, was soon the highest-priced stock listed on the New York Exchange. To build a 51-mile-long ship canal to replace that railroad seemed an easy matter to some investors. But, as McCullough notes, the construction project came to involve the efforts of thousands of workers from many nations over four decades; eventually those workers, laboring in oppressive heat in a vast malarial swamp, removed enough soil and rock to build a pyramid a mile high. In the early years, they toiled under the direction of French entrepreneur Ferdinand de Lesseps, who went bankrupt while pursuing his dream of extending France's empire in the Americas. The United States then entered the picture, with President Theodore Roosevelt orchestrating the purchase of the canal--but not before helping foment a revolution that removed Panama from Colombian rule and placed it squarely in the American camp. The story of the Panama Canal is complex, full of heroes, villains, and victims. McCullough's long, richly detailed, and eminently literate book pays homage to an immense undertaking. --Gregory McNamee

The Hundred Dresses

Wanda Petronski lives way up in shabby Boggins Heights, and she doesn't have any friends. Every day she wears a faded blue dress, which wouldn't be too much of a problem if she didn't tell her schoolmates that she had a hundred dresses at home--all silk, all colors, and velvet, too. This lie--albeit understandable in light of her dress-obsessed circle--precipitates peals of laughter from her peers, and she never hears the end of it. One day, after Wanda has been absent from school for a few days, the teacher receives a note from Wanda's father, a Polish immigrant: "Dear teacher: My Wanda will not come to your school any more. Jake also. Now we move away to big city. No more holler Polack. No more ask why funny name. Plenty of funny names in the big city. Yours truly, Jan Petronski." Maddie, a girl who had stood by while Wanda was taunted about her dresses, feels sick inside: "True, she had not enjoyed listening to Peggy ask Wanda how many dresses she had in her closet, but she had said nothing.... She was a coward.... She had helped to make someone so unhappy that she had had to move away from town." Repentant, Maddie and her friend Peggy head up to Boggins Heights to see if the Petronskis are still there. When they discover the house is empty, Maddie despairs: "Nothing would ever seem good to her again, because just when she was about to enjoy something--like going for a hike with Peggy to look for bayberries or sliding down Barley Hill--she'd bump right smack into the thought that she had made Wanda Petronski move away." Ouch. This gentle Newbery Honor Book convincingly captures the deeply felt moral dilemmas of childhood, equally poignant for the teased or the tormentor. Jobs retired at the end of August and died about six weeks later. Now, just weeks after his death, you can open the book that bears his name and read about his youth, his promise, and his relentless press to succeed. But the initial sadness in starting the book is soon replaced by something else, which is the intensity of the read--mirroring the intensity of Jobs’s focus and vision for his products. Few in history have transformed their time like Steve Jobs, and one could argue that he stands with the Fords, Edisons, and Gutenbergs of the world. This is a timely and complete portrait that pulls no punches and gives insight into a man whose contradictions were in many ways his greatest strength. --Chris Schluep Amazon Exclusive: A Q&A with Walter Isaacson Q: It's becoming well known that Jobs was able to create his Reality Distortion Field when it served him. Was it difficult for you to cut through the RDF and get beneath the narrative that he created? How did you do it? Isaacson: Andy Hertzfeld, who worked with Steve on the original Macintosh team, said that even if you were aware of his Reality Distortion Field, you still got caught up in it. But that is why Steve was so successful: He willfully bent reality so that you became convinced you could do the impossible, so you did. I never felt he was intentionally misleading me, but I did try to check every story. I did more than a hundred interviews. And he urged me not just to hear his version, but to interview as many people as possible. It was one of his many odd contradictions: He could distort reality, yet he was also brutally honest most of the time. He impressed upon me the value of honesty, rather than trying to whitewash things. Q: How were the interviews with Jobs conducted? Did you ask lots of questions, or did he just talk? Isaacson: I asked very few questions. We would take long walks or drives, or sit in his garden, and I would raise a topic and let him expound on it. Even during the more formal sessions in his living room, I would just sit quietly and listen. He loved to tell stories, and he would get very emotional, especially when talking about people in his life whom he admired or disdained. Q: He was a powerful man who could hold a grudge. Was it easy to get others to talk about Jobs willingly? Were they afraid to talk? Isaacson: Everyone was eager to talk about Steve. They all had stories to tell, and they loved to tell them. Even those who told me about his rough manner put it in the context of how inspiring he could be. Q: Jobs embraced the counterculture and Buddhism. Yet he was a billionaire businessman with his own jet. In what way did Jobs' contradictions contribute to his success? Isaacson: Steve was filled with contradictions. He was a counterculture rebel who became a billionaire. He eschewed material objects yet made objects of desire. He talked, at times, about how he wrestled with these contradictions. His counterculture background combined with his love of electronics and business was key to the products he created. They combined artistry and technology. Q: Jobs could be notoriously difficult. Did you wind up liking him in the end? Isaacson: Yes, I liked him and was inspired by him. But I knew he could be unkind and rough. These things can go together. When my book first came out, some people skimmed it quickly and cherry-picked the examples of his being rude to people. But that was only half the story. Fortunately, as people read the whole book, they saw the theme of the narrative: He could be petulant and rough, but this was driven by his passion and pursuit of perfection. He liked people to stand up to him, and he said that brutal honesty was required to be part of his team. And the teams he built became extremely loyal and inspired. Q: Do you believe he was a genius? Isaacson: He was a genius at connecting art to technology, of making leaps based on intuition and imagination. He knew how to make emotional connections with those around him and with his customers. Q: Did he have regrets? Isaacson: He had some regrets, which he expressed in his interviews. For example, he said that he did not handle well the pregnancy of his first girlfriend. But he was deeply satisfied by the creativity he ingrained at Apple and the loyalty of both his close colleagues and his family. Q: What do you think is his legacy? Isaacson: His legacy is transforming seven industries: personal computers, animated movies, music, phones, tablet computing, digital publishing, and retail stores. His legacy is creating what became the most valuable company on earth, one that stood at the intersection of the humanities and technology, and is the company most likely still to be doing that a generation from now. His legacy, as he said in his "Think Different" ad, was reminding us that the people who are crazy enough to think they can change the world are the ones who do. One of the most beautifully crafted books I have ever read, with some of the most poetic prose passages I could imagine, such as the following, resonating with a stately and timeless quality so absent in our modern life: There are all kinds of silences and each of them means a different thing. There is the silence that comes with morning in a forest, and this is different from the silence of a sleeping city. There is silence after a rainstorm, and before a rainstorm, and these are not the same. There is the silence of emptiness, the silence of fear, the silence of doubt. There is a certain silence that can emanate from a lifeless object as from a chair lately used, or from a piano with old dust upon its keys, or from anything that has answered to the need of a man, for pleasure or for work. This kind of silence can speak. Its voice may be melancholy, but it is not always so; for the chair may have been left by a laughing child or the last notes of the piano may have been raucous and gay. Whatever the mood or the circumstance, the essence of its quality may linger in the silence that follows. It is a soundless echo. Born in England in 1902, Markham was taken by her father to East Africa in 1906. She spent her childhood playing with native Maruni children and apprenticing with her father as a trainer and breeder of racehorses. In the 1930s, she became an African bush pilot, and in September 1936, became the first person to fly solo across the Atlantic from east to west.

With Visual Explanations, Edward R. Tufte adds a third volume to his indispensable series on information display. The first, The Visual Display of Quantitative Information, which focuses on charts and graphs that display numerical information, virtually defined the field.
